been used mainly as sweetener, but also in medicine.
Primeval humans gathered and ate the honey and honeycombs of wild bees, the only available sweet, as far back as 7000 BC.
As the only sweetener, honey was an important food for man since the very beginning of man. The story of honey and Homo sapiens started during the stone age. In order to reach the honey sweet man climb up, may be risking his life.
For a long time in human history it was an important carbohydrate source and the only largely available sweetener until industrial sugar production began to replace it after 1800. At present the annual world honey production is about 1.2 million tons, which is less than 1% of the total sugar production.

The water content is a quality parameter, important above all for honey shelf life. Higher honey humidity will often cause fermentation. There is a relation between honey water content and the yeast count (see chapter on honey microbiology). At 17 % humidity, there is a very minimal fermentation danger due to the
very low yeast content.
The water activity (aw) is proportional to the free water content in food. In honey a part of the water is bound to sugars and is thus unavailable for microorganisms, thus the aw value and not the overall water content is the criteria determining bacterial spoilage. The aw values of honey vary between 0.55 und 0.75, honeys with
an aw value < 0,60 are microbiologically stable.
Actually, it is the better quality criteria for honey than the water content, because it will indicate the free water content, which is microbiologically active to eventually cause fermentation. However, the simple and fast measurement of the water content has proven sufficient for assaying the fermentation risk of honey.

2.1 The University agrees to carry out the Research Work as described in Schedule 1.
2.2 The University may at its sole discretion decline to carry out the Research Work because of lack of resources or materials, unsuitability of samples provided, considerations of safety, ethical considerations, or any other reason.
2.3 If the Research Work involve people or animals then,
notwithstanding any other provision of this Agreement, the Research Work will not be carried out unless the prior approval of the appropriate University Ethics Committee has been obtained.
2.4 The University agrees to return to the Client at the end of the this Agreement all remaining sample or products supplied for the purpose of the Research Work, if required by the Client and specified well before the Research Work is completed.
2.5 The University shall invoice the Client at the agreed fee and times set out in Schedule 3 for the Research Work
carried out. The Client shall pay the full amount of any invoice within 30 days of date of invoice.
2.6 The amounts payable under this Agreement as shown in
Schedule 3 have been calculated to include GST.
2.7 The University shall obtain written permission from the Client before carrying out any Research Work which would cause the total cost of Research Work carried out under this Agreement to exceed the total fee due as shown in Schedule 3.

2.1 Üniversite Araştırma Çalışmasını Plan 1'de açıklandığı gibi gerçekleştirmeyi kabul eder.
2.2 Üniversite tamamen kendi takdirine bağlı olarak, kaynakların veya malzemelerin eksikliği, verilen örneklerin uygun olmaması, güvenlik kaygıları, etik kaygılar, ya da başka bir nedenle Araştırma Çalışmasını gerçekleştirmeyi geri çevirebilir.
2.3 Araştırma Çalışması insanlar veya hayvanları içeriyorsa, işbu sözleşmenin diğer hükümlerine bakılmaksızın, uygun Üniversite Etik Kurulu onayı alınmadığı takdirde, Araştırma Çalışması yürütülmeyecektir.
2.4 Üniversite, Araştırma Çalışması tamamlanmadan çok önce Müşteri’ye gerekliyse ve önceden belirtilmişse, Araştırma Çalışması amacıyla verilen numune ya da ürünlerin kalanlarını bu Anlaşmanın sonunda Müşteri'ye geri göndermeyi kabul eder.
2.5 Üniversite yürütülen Araştırma Çalışması için Müşteri'ye Plan 3'te belirtilen ve anlaşılan ücret ve zamanlarda fatura kesecektir. Müşteri fatura tarihinden itibaren 30 gün içinde herhangi bir fatura tutarının tamamını ödemek zorundadır.
2.6 Plan 3'te gösterildiği gibi, bu Anlaşma uyarınca ödenecek tutarlar GST dahil şekilde hesaplanmıştır.
2.7 Üniversite, bu Anlaşma uyarınca yürütülen Araştırma Çalışmasının toplam maliyetinin Plan 3'te gösterilen toplam ücreti aşmasına sebep olacak herhangi bir Araştırma Çalışması yapmadan önce Müşteri'den yazılı izin almak zorundadır.
