I'd use "zinc patina"--it doesn't really mean anything super shiny. Rather, it is an oxidation process.

patinated zinc

patine (WITH the accent) really means patinated --- this could be naturally oxidised, or deliberately 'aged'

In the context of a restaurant decor, I think this could work better
