Source text - Hungarian Az ételek káros elváltozásait három csoportra oszthatjuk: az élelmiszer romlás hatására az élelmiszerek értéke csökken, s bár mérgező anyagot nem tartalmaz, undorkeltő, fogyasztásra nem alkalmas. Az ételmérgezés mikrobiológiai, vagy mikroorganizmusok anyagcsere termékei /toxinjai, enzimjei, vagy bomlástermékei/ váltják ki. Élelmiszerfertőzésről abban az esetben beszélhetünk, ha az ételbe idegen eredetű fertőző anyag kerül.
A mikroorganizmusok káros hatásának elhárításához alapvető mikrobiológiai ismeretekkel kell rendelkeznie a raktározás, a termelés és az értékesítés területén dolgozóknak. Árubeszerzés, tárolás és készletezéssel kapcsolatban a következő kezelési feladatokat kell elvégezni:
• a beérkezett árut ki kell venni az „utcai” csomagolásból, így elkerülhető a külső a szennyeződések bevitele a raktárba;
• a szavatossági idő betartása, figyelemmel kisérése;
• rendszeresen ellenőrizni kell a gyorsan romló élelmiszerek /hús, tej, tejtermék/ szakosított tárolását biztosító hűtőszekrényekben, hogy a hőmérséklet ne haladja meg a plusz 5 Celsius fok értéket;
• a hűtőben tárolt ételeket feltétlenül le kell takarni. A mélyhűtött árukat mínusz 18-20 Celsius fokon kell tárolni. Ezeket felengedés után visszahűteni, ill. visszafagyasztani szigorúan tilos!
Translation - English The harmful decay of food can be divided in three groups: as a result of foodstuff decay, the value of foodstuffs is decreased, and although it does not contain toxic materials, it is disgusting and unsuitable for consumption. Food poisoning is induced by the results (toxins, enzymes or detrita) of microbiological metabolism or of microorganisms’ metabolism. It is a case of foodstuff infection when infectious materials of foreign extraction get into the food.
To prevent the harmful effect of microorganisms, those who work in the field of storage, production, and sales must have basic microbiological knowledge. The following tasks must be done in connection with supplying, storing, and stocking:
• incoming deliveries must be unpacked from the “street” packing, this way transferring outside contamination to the warehouse can be avoided;
• monitoring and complying with the warranty time;
• in case of fast decaying foodstuff (meat, milk, dairy products), the refrigerators used for categorized storage must be regularly monitored, so the temperature inside them should not exceed plus 5 Centigrade;
• under all circumstances, foods stored in refrigerators must be covered. Deep frozen products must be stored between 18 and 20 Centigrade. Recooling or refreezing these products is strictly prohibited!
