My thinking is "electrical measurement of the useful stroke".
I.e. the sensors are used to measure the stroke and convert to an electrical signal.

Explanation:
I think you have it in your exisiting translation — though you may need to play around slightly with the exact word order you use.
With anything like a pedal, lever, etc., the normal word you need is 'travel'; stroke only applies in much narrower range of contexts, often where a reciprocating movement is taking place.
The mechanical travel of e.g. a pedal, knob, etc. will be determined by mechanical stops etc. — but not all of the length of that travel will necessarily actually do anything (i.e. 'be useful') — for example, there might be over-travel or lost motion at the ends.
Equally, when that physical movement is translated by some means into an electrical signal for use by the rest of the system (e.g. a fader on a sound mixer, or a fuel gauge on a car), the electrical signal produced may only be "meaningful" over a certain part of the mechanical travel — typically, with say a slider potentiometer, there is a track with variable resistance along its length, but at either end, there may be a 'dead' area where the resistance no longer varies.
So this is where we get the electrically useful/usable idea.
It's less obvious why they bother to add 'measurement' — this appears to be a fundamental part of its function; but perhaps they are eager to emphasise that the varying electrical signal (possibly a resistance, or a voltage, say) is what the rest of the system is 'measuring' in order to achieve the desired purpose.

neutral  Jennifer Levey: I see nothing in the ST that refers to a 'CPU', or to an 'angle' - and less still any 'payload'. The ST describes a simple digital position-monitoring system, // (added:) quite possibly using nothing more complicated than a cheap PLC.
