versatile ingredient


Explanation:
"Transversal" does not mean "core", "key" or "staple". Depending on context, it can mean "multipurpose" ("multipurpose tool"), "transferable" ("transferable skills"), etc. In this context, I think "versatile" would be a suitable option.

And that is why it says it is an ingredient "...muchos cocineros defienden como fuente de creatividad".
