German term or phrase: Antragsgegner
I'm specifically asking about divorce cases. In court, "der Antragsgegner" usually means "the defendant," but I don't believe that this term is correct in a divorce proceeding.

respondent
Explanation:
There is one ground for divorce: that the marriage has irretrievably broken down.
The evidence is set out in the petition: the spouse who files the petition is called the petitioner, the other is called the respondent.

Explanation:
You're right, in divorce proceedings, the party who didn't file the application for dissolution of marriage is usually called "respondent" - I'm not sure though whether that applies to all English-speaking jurisdictions.
