...I thought roast was a method of cooking, could it refer to a cut of meat here? I have a picture in a visual dictionary showing the upper thigh of a lamb and calling it "roast"

Explanation:
Technically when we call a cut of meat a "roast" it is one which has been baked in an oven.

Colloquially a "roast" is a piece of baked meat usually beef, pork or lamb. When we refer to poultry we usually don't use the word alone to describe it but call it "roast chicken" etc. But we talk of baked fish, but roasted veg.
Note also a "roast dinner", comprises baked meat, potatoes and vegetables.
