Greetings,
My problem here is that your words for ‘giant’ (غول, دیو) are not words that you would use as a compliment – but it is definitely a compliment to call someone a ‘gentle giant’.
Please see:

Jenny Randerson described fellow AM Mick Bates as a "genuine" and "disarmingly truthful gentle giant".
All the best, and many thanks,
Simon

غول آرام
"gentle giant" has a paradox in itself and this can be shown in Persian using the same way. You are right about دیو, but غول is used for compliment these days (you may refer to the following links).

غول نجیب/ غول بی آزار
Unlike دیو, which is used to describe a demonic character or nature, غول does not necessarily have a negative connotation, and it is used in such complimentary phrases as the following:
غول نرم افزاری جهان
غول تجارت الکترونیکی
غول های تجاری
In such examples, “غول” refers to “a very successful and powerful person or organization”
In you example, also, “giant” must mean “powerful”, and not all powerful entities are necessarily “ill-natured”.
So such Persian equivalents as “غول نجیب”“غول بی آزار” are quite acceptable.

Pahlevan panbe/ zaheresh ghalat andaze
Gentle giant is a term used to refer to a person who has an intimidating appearence and a gentle disposition. For example if a person is very bulky or very tall but has a kind and gentle manner they would be referred to as a gentle giant. In farsi we make a sense for sense translation of it to " zaheresh ghalat andaze" or the more common and colloqual " pahlevan pambe" ... Also the vulgata of " table too khali" may be appropriate which might not apply in the context here.

غول رئوف
I think this is somehow close to the rhythm of the source term /dʒ/sound in "gentle giant" and /u:/ in غول رئوف
/ghu:l e rau:f/
/ghu:l e rau:f/
Discussion
غول مهربان or غول بی آزار also doesn't have any intimidating characteristic. It just denotes the powerfulness and hugeness of that being.
Kind regards,
