We don't usually say "humid" about concrete, and "specific mass", although correct, usually gives way to "density" even in academic writing (which is correct, too).

What they want to say here is that the determination of density is one of the ways to find out when it has completely set. The concrete achieves maximum strength when it absorbs all the water it can absorb.

The Google Books article will provide all the necessary English terms for this project, and the pictures by F. Lázaro will give you a brilliant visual of the subject. For me, it is so much easier to write about something when I can see it.
