The context sentence comes from a novel that I am translating, and in fact I am not clear as to the meaning of the entire phrase in which the word occurs. The full sentence is as follows:

Πρέπει να στύβω διαρκώς το μυαλό μου για να βρω μια πληκτική, αξιοπρεπώς αμειβόμενη απασχόληση και να γράφω αυτά τα γλοιώδη στις αιτήσεις των Εκπαιδευντηρίων Παντουβάκη, "Πόσο θα ήθελα να προσφέρω τις γνώσεις μου γύρο από τη φωτογραφία σε παιδιά του δημοτικόυ."

The opening is perfectly clear - the confusion begins with 'γλοιώδη' - I know what the adjective means, but is the word here functioning as an adjective, or as a noun? In the former case, what noun is it modifying?

2) Why is the genitive plural of Εκπαιδευντήριο capitalised?

Later on in the book it becomes clear that Pantouvakis is a person, so problem there either... but I'm not sure as to the meaning of 'στις αιτήσεις'... is the narrator writing something in a request, or answering one (on the part of Mr. Pantouvakis?) If anyone whose modern Greek is better than mine (99% of Greek speakers, I expect) could help me to make sense of this, I'd appreciate it!

"γλειώδη" refers to the sentence in quotation marks "πόσο θα ήθελα ...."

usually - if not always - "εκπαιδευτήρια X" are private schools

The plural form is used very often to denote a school. The correct is Εκπαιδευτήριο and the plural Εκπαιδευτήρια

The right word is of course Εκπαιδευτήριο.
Γλοιώδη hier is an adjektive, the noune is missing. It could probably be γλοιώδη πράγματα.
I don t know, if I understood the context, but I think the narrator is looking for a job, isnt he? So, I think, he writes these "γλοιώδη". Perhaps the Εκπαιδευτήρια Παντουβάκη have their own application forms and the narrator has to fill them, in order to apply for a job? It depends on the context.

1. Εκπαιδευτήριο=School (usually, modern "Εκπαιδευτήρια" comprise primary and secondary education.)

2. It is capitalised because it is a title, i.e. "Εκπαιδευτήρια Παντουβάκη", Pantouvaki(s) School, as in Costeas-Geitonas School, Arsakeio etc etc http://www.cgs.gr/
