¿Cuál es el término adecuado en inglés para este tipo de corte? Se trata de un corte de carne que ofrecemos en restaurantes de Cancún y Riviera Maya. Después de ver definiciones en ambos idiomas, estas dos opciones son las que más asemejan: "Hanger steak" y "skirt steak".

Arrachera: es el nombre que se le da en México a un corte particular de carne de res que proviene del diafragma del animal,1​ un músculo que separa la cavidad torácica de la cavidad abdominal. En otros países recibe muchos otros nombres. Por ejemplo, se la llama entraña en Chile y Argentina, hanger steak en Estados Unidos, pulgarejo en Colombia, y onglet en Francia.

Según yo, la "Skirt Steak" es la que más se asemeja (viendo la parte del animal de donde es el corte). Sin embargo, en la definición en español dice lo siguiente: "se la llama entraña en Chile y Argentina, hanger steak en Estados Unidos"

hanger steak


Explanation:
After having a look at photos of both hanger steak and skirt steak, I have to say that "arrachera", a cut that I've often bought and ordered at restaurants here, looks exactly like the photos of hanger steak.
In my opinion, "skirt steak" is "falda de res", a streaky, more fatty cut.

Here you have the same author saying "hanger steak" is "arrachera". I admit to be comparing it with our "entraña" which is not exactly the same, but I would choose the picture in "skirt steak". Here is the other link for you to decide:
